The Blue Bird opened as a roadside inn in 1919 and has been feeding this town ever since — from a dining room, a glassed-in porch, and a counter where you can watch your eggs go on the griddle.

Restaurants come and go. A few stay put long enough to become part of how a town describes itself.
The building went up in 1919 as a bed and breakfast on what was then a quiet stretch of country road between the farms and the reservoir. It sits on Route 58 in Easton, between the gas station and Aspetuck Park, behind a bank of hydrangeas, and if you're new to the area it is genuinely easy to drive straight past.
Inside, not much has moved. Dark board walls, wide plank floors, a butcher-block counter that has been sanded down more than once. There are two front doors — one into the dining room, one into the counter — so you can pick which kind of morning you're having before you've even taken your coat off.
The walls have accumulated. A framed map of Easton, yellowed newspaper clippings about the place, a washboard, a cast-iron spoon the size of an oar, and a corner cabinet full of porcelain dolls that has clearly been growing for decades. Near the register hangs a sign explaining that grouchy customers are charged ten dollars for the trouble of putting up with them. Nobody has ever paid it.
Muffins and coffee cake are made by hand every morning — blueberry, oat bran, orange cornbread, poppy seed. Everything is cooked to order. Generations of Easton kids rode bikes down here, ate lunch, and went on to the pool; a good number still come in on Saturday mornings, now with kids of their own. That is more or less the whole business plan.

The counter
Butcher block, stools, a clear view of the griddle. Fastest seat in the house and the best one for eating alone. Takeout goes out from here.
Left door
The dining room
Wide plank floors and the original dark walls. Tables for four and up, and room for the sort of family breakfast that runs long.
Through the back
The porch
Glassed in on three sides, red gingham curtains, plants along every sill. Brightest room in the building and the first to fill up.

One table, one umbrella, tucked beside the building. Take it if it's free and the weather's holding.

We are a breakfast and lunch house — the kitchen shuts at 2 pm every day, and we are closed Mondays.
